INGREDIENTS
Oil and Seasonings
- 2 tablespoons extra-virgin olive oil
- 🧂 1 ½ teaspoons kosher salt
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ¼ teaspoon ground cinnamon
Vegetables
- 🧅 1 medium onion, chopped
- 🥔 1 russet potato, cubed
- 3 ribs celery, chopped
- 🧄 4 cloves garlic, chopped
- 1 small bunch cilantro, chopped, divided
- 1 bunch Swiss chard, stems removed and leaves sliced into thin ribbons
Legumes
- 1 ½ cups brown lentils
Liquids
- 💧 8 cups water
- 🍋 2 lemons
STEPS
Select the Saute function on the Instant Pot. Heat olive oil in the pot and add onion, potato, celery, and garlic. Cook and stir until starting to soften, 3 to 5 minutes.
Sprinkle half of the chopped cilantro, kosher salt, cumin, coriander, and cinnamon. Stir until fragrant.
Pour in water and lentils. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
Release pressure using the quick-release method. Unlock and remove the lid, stir in Swiss chard, and cover the pot for 5 minutes until the chard wilts.
Uncover and stir in the juice of one lemon. Taste and adjust seasoning. Garnish with remaining chopped cilantro.
Serve with additional lemon wedges for garnish.
