    • 1 tablespoon hon mirin (Japanese mirin)
    • 🍬 ¾ tablespoon white sugar
    • 🧂 ½ teaspoon sea salt

Rinse rice in a multi-functional pressure cooker, adding water and mixing it in a circular motion. Strain through a sieve. Repeat until water comes out clear, about five rinses. Spread rice onto a clean cloth and let dry for 10–15 minutes.

Clean kombu gently with a damp towel (do not remove the white powder). Break off a small piece of kombu and place it into a small saucepan.

Place remaining kombu into the Instant Pot with rice and water. Set the pressure cooker to high pressure for 2 minutes. Allow 10–15 minutes for pressure to build.

Use natural-release (8 minutes) and quick-release methods to release pressure from the Instant Pot. Remove the lid carefully.

While pressure is releasing, heat rice wine, mirin, sugar, and sea salt in the saucepan over low heat. Avoid boiling. Mix until sugar and salt are dissolved.

Transfer cooked rice into a glass or ceramic bowl, removing and discarding the kombu. Stir rice gently while sprinkling the vinegar mixture over it until fully incorporated. Let cool to room temperature.
