    • ¼ teaspoon chili powder
  • Liquid Base and Garnishes

    • 💧 8 cups water
    • 🍋 1 lemon, zested and juiced, divided

Soak lentils and rice in cold water to cover for at least 30 minutes. Rinse and drain. Set aside.

Turn on Instant Pot® in Saute mode. Add olive oil and saute carrots, celery, and onion until softened, about 5–7 minutes.

Stir in coriander, salt, thyme, rosemary, black pepper, and chili powder. Add drained rice and lentils, then pour in water and add lemon zest.

Close and lock the lid of the Instant Pot®. Cook on high pressure for 12 minutes, allowing 10–15 minutes for pressure to build.

After cooking, release pressure naturally for 5 minutes. Unlock and remove the lid.

Stir in lemon juice. Adjust seasonings to taste if necessary. Serve with optional lemon wedges.
