- 1 teaspoon baking powder
Glaze Ingredients
- 2 cups sifted confectioners' sugar
- 1 lemon, juiced
- Additional whiskey
- Warm water
STEPS
Place raisins, lemon zest, and whiskey in a bowl; soak overnight.
Preheat the oven to 350°F (175°C). Line an 8-inch square cake pan with buttered and floured parchment paper. Sift flour, salt, cloves, and baking powder into a bowl; set aside.
Cream butter and sugar in a large bowl until light and fluffy. Add egg yolks and beat well. Quickly mix in dry flour mixture and soaked raisins.
Whip egg whites until stiff in a separate bowl and fold into the batter. Pour batter into prepared pan.
Bake in the preheated oven for 45-60 minutes, or until a toothpick inserted in the center of the cake comes out clean. Cool cake on a wire rack.
Prepare the glaze by mixing lemon juice, confectioners' sugar, and enough whiskey and warm water to form a drizzle. Drizzle over the cooled cake.
