INGREDIENTS
Crust
- 1 ½ cups all-purpose flour
- 🧂 ½ teaspoon salt
- 2 tablespoons white sugar
- 🧈 ½ cup butter, chilled
- 4 tablespoons ice water
Filling
- 🥚 3 eggs, beaten
- ¾ cup light corn syrup
- 2 tablespoons dark corn syrup
- ¾ cup light brown sugar
- 🧈 3 tablespoons butter, melted
- 🧂 1 pinch salt
- ½ cup pecans, finely crushed
- 1 cup pecans, quartered
- 1 cup pecan halves
STEPS
Preheat oven to 350°F (175°C).
To make the crust, combine flour, salt, and sugar in a medium bowl. Cut butter into the mixture until it reaches a coarse crumb texture. Gradually add water until a dough forms.
Roll the dough on a floured surface into a circle one inch larger than your pie dish. Place the dough into the dish and refrigerate.
For the filling, mix eggs, light and dark corn syrups, brown sugar, melted butter, salt, and finely crushed pecans in a bowl.
Spread quartered pecans over the bottom of the refrigerated crust. Pour the syrup mixture on top, then arrange pecan halves over the mixture.
Bake the pie in the preheated oven for 1 hour or until firm. Let it cool for another hour before serving.
