INGREDIENTS
Cookie Bars
- 🧈 1/2 cup unsalted butter
- 3/4 cup white sugar
- 1/4 cup light brown sugar
- 🧂 1/2 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 8 ounces whole milk ricotta cheese
- 1 teaspoon lemon zest
- 2 teaspoons lemon juice
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon baking soda
Icing
- 1 1/4 cups confectioner's sugar
- 🧈 1 tablespoon unsalted butter
- 2 teaspoons lemon juice
- 1/2 teaspoon vanilla extract
- 🧂 1 pinch of salt
- 🥛 3 teaspoons whole milk
STEPS
Preheat the oven to 350°F (180°C). Line a 9x9-inch square pan with parchment paper and lightly grease it.
For cookie bars, beat butter, white sugar, brown sugar, salt, and nutmeg with an electric mixer until light and fluffy, about 2-3 minutes.
Add eggs and beat for 1 more minute. Add ricotta, lemon zest, lemon juice, and vanilla and mix until incorporated.
Add flour and baking soda and mix until just combined. Transfer batter into the prepared pan and spread evenly.
Bake the bars until golden and the center feels set, about 30 minutes. Remove from oven and let cool completely.
For icing, mix powdered sugar, melted butter, lemon juice, vanilla, salt, and milk until smooth. Adjust consistency with additional milk if needed.
Pour glaze over cooled bars and spread evenly. Optional: Sprinkle nonpareils over glaze before it sets.
Allow glaze to set completely. Refrigerate bars if needed before cutting into 16 pieces for serving.
