INGREDIENTS
Base Sauce
- 1 tablespoon olive oil
- ¼ cup white wine
- 1 (32 ounce) jar marinara sauce
- 1 ½ cups water
Main Items
- 4 (6 ounce) sweet Italian sausage links
- 1 (16 ounce) package spaghetti
Toppings and Garnish
- ½ cup freshly grated Parmigiano-Reggiano cheese
- 2 tablespoons chopped flat-leaf (Italian) parsley
STEPS
Heat olive oil in a saucepan over medium heat. Brown sausage links covered until cooked, about 5 minutes per side. Cool sausages on a plate.
Deglaze the pot with white wine by stirring browned bits into the simmering wine. Reduce wine by half, 1 to 2 minutes.
Add marinara sauce and water from rinsed jar into the pot. Return to a simmer at low heat.
Slice cooled sausages into 4 pieces each and transfer with juices into the simmering sauce. Simmer gently for 1 hour, stirring occasionally and adjusting seasonings. Skim surface fat and continue cooking until reduced and thick, about 30 minutes longer.
Cook spaghetti in salted boiling water until tender but firm to bite, about 10 to 11 minutes. Drain and transfer directly into the pot of hot sauce. Combine thoroughly and let rest 1 minute covered.
Divide pasta onto 4 plates, top each with sausage pieces, and garnish with grated cheese and parsley.
