INGREDIENTS
Fish
- 1 can (200g) seasoned iwashi
Vegetables
- 🥔 2 potatoes (300g), peeled and chopped
- 🍅 6 mini tomatoes, stem removed
- 1 green onion, cut into 3cm slices
Seasoning
- đź§‚ A pinch of salt and pepper
- 2 tbsp mayonnaise
Dairy
- đź§€ Sufficient amount of pizza cheese
STEPS
Peel and chop the potatoes into bite-sized pieces. Soak them in water briefly, then drain. Place them in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 5 minutes until softened.
Remove the stems from the mini tomatoes. Slice the green onion diagonally into 3cm pieces.
Add the iwashi can to the softened potatoes, then mix in the mini tomatoes, salt, pepper, and mayonnaise. Stir gently to combine.
Transfer the mixture to a heatproof container, top with pizza cheese, and bake in a toaster oven until the cheese is golden brown. Garnish with sliced green onion.
