INGREDIENTS
Fish
- 160g iwashi fillets
Vegetables
- 50g sliced burdock root
- 1/4 bunch mitsuba
Egg
- 🥚 2 beaten eggs
Seasoning
- Pinch of sansho pepper
- 2 tbsp sake
- 1 tbsp mirin
- 1 tbsp soy sauce
- 1/2 tsp dashi powder
- đź’§ 4 tbsp water
STEPS
Slice burdock root thinly and soak in water. Drain and cut mitsuba into 3cm pieces.
Cut iwashi fillets into bite-sized pieces.
In a pan, combine seasoning ingredients and burdock root. Heat and simmer for 3 minutes until burdock softens.
Add iwashi fillets to the pan and cook until they are fully cooked.
Pour beaten eggs over the mixture, cover, and cook until eggs are semi-set.
Serve on a plate, garnish with mitsuba, and sprinkle sansho pepper.
