INGREDIENTS
Meat
- 🥩 1 pound ground beef
Dry Ingredients
- ⅔ cup bread crumbs
Eggs
- 🥚 2 eggs, whisked
Spices
- 🧂 2 teaspoons salt, divided
- 1 ½ teaspoons ground black pepper, divided
- 🧄 1 teaspoon garlic powder
Cheese
- 1 (8 ounce) package cream cheese, softened
- 🧀 1 cup grated Cheddar cheese (Optional)
- 🧀 2 tablespoons grated Cheddar cheese, or to taste (Optional)
Vegetables
- 3 jalapeno peppers, seeded and diced
Liquids and Sauces
- 3 tablespoons barbeque sauce, or as needed

STEPS
Preheat the oven to 350 degrees F (175 degrees C).
Mix ground beef, bread crumbs, eggs, 1 teaspoon salt, and 1 teaspoon pepper in a bowl. Press 3/4 of the meat mixture into a loaf pan, leaving a well in the middle.
Combine cream cheese, 1 cup Cheddar cheese, jalapeno peppers, garlic powder, remaining salt, and remaining pepper. Press this mixture into the well of the meatloaf. Cover with remaining meat mix and seal edges. Cover with aluminum foil.
Bake in the oven until no longer pink in the center, for 30 to 40 minutes. An instant-read thermometer should read at least 160 degrees F (70 degrees C). Remove from oven.
Brush meatloaf with barbeque sauce and sprinkle with Cheddar cheese. Move the oven rack 6 inches from heat source and preheat the broiler.
Broil the meatloaf until the barbeque sauce is bubbly and cheese is melted, about 2 to 3 minutes.
