INGREDIENTS
Seafood
- 🦐 1 pound peeled and deveined medium shrimp
Produce
- 🍋 1 cup fresh lime juice
- 🧅 1 large yellow onion, diced
- 🥑 2 medium avocados, diced
- 🍅 2 medium tomatoes, diced
- 🥬 1 stalk celery, chopped
- 1 jalapeño pepper, finely chopped
- 1/4 cup chopped fresh cilantro
Seasoning
- 🧂 Salt, to taste
- Black pepper, to taste
STEPS
Place shrimp in a large glass or other non-reactive bowl; cover with lime juice to marinate until they turn pink and opaque, about 10 minutes.
Meanwhile, combine diced tomatoes, avocados, celery, onion, and jalapeño in a separate large glass or other non-reactive bowl.
Remove shrimp from lime juice, reserving the juice. Dice shrimp and add to the bowl with vegetables.
Add reserved lime juice and chopped cilantro; season with salt and black pepper. Toss gently to combine.
