INGREDIENTS
Chicken
- 🍗 1 piece (250g) chicken thigh
Coating
- 3 tbsp potato starch
- 3 tbsp all-purpose flour
Oil
- Enough salad oil for frying
Seasoning
- 1 tbsp sake
- đź§‚ 1/2 tsp salt
- 1/2 tsp chicken broth powder
- 1 tsp sesame oil
- 1 tsp grated ginger
- đź§„ 1 tsp grated garlic
STEPS
Trim excess fat and sinew from the chicken thigh and cut into bite-sized pieces.
In a bowl, combine chicken pieces with sake, salt, chicken broth powder, sesame oil, grated ginger, and grated garlic. Massage the seasoning into the chicken. Cover with plastic wrap and refrigerate for 30 minutes.
Add potato starch and all-purpose flour to the marinated chicken and mix thoroughly until evenly coated.
Heat salad oil in a pot to 170°C (340°F), about 2cm deep. Fry the chicken pieces on medium heat for 2 minutes without touching them, then flip and fry for another 3 minutes until golden brown and cooked through.
