INGREDIENTS
Dough
- 2 teaspoons yeast
- 2 tablespoons warm water
- 🧀 1 1/2 cups shredded part-skim mozzarella cheese (melted)
- 🥚 1 large egg, lightly beaten
- 1 cup almond flour
- 1 teaspoon xanthan gum
- 🧂 1/8 teaspoon salt
Toppings
- 1/4 cup no-sugar-added pizza sauce
- 2 ounces sliced pepperoni
- 1 pinch red pepper flakes to taste (optional)
- 🧀 1 1/2 cups shredded part-skim mozzarella cheese (for topping)
STEPS
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. Dissolve yeast in warm water in a small cup and set aside.
Place 1 1/2 cups shredded mozzarella cheese into a microwave-safe bowl. Microwave for 90 seconds, stirring every 30 seconds, until completely melted. Stir in the yeast mixture and beaten egg.
Gradually mix in almond flour, xanthan gum, and salt. Reheat in the microwave for 20-30 seconds if needed to soften the cheese. Knead by hand for about 2 minutes until a uniform dough forms.
Press the dough into a thin crust, about 11-12 inches in diameter, on the prepared baking sheet.
Bake the crust in the preheated oven until lightly browned, approximately 10 minutes.
Spread pizza sauce evenly over the baked crust. Add the remaining shredded mozzarella cheese and arrange pepperoni slices on top.
Return the pizza to the oven and bake until the cheese melts, about 5 minutes. Sprinkle with red pepper flakes if desired. Cut into six slices and serve.
