INGREDIENTS
Rice Base
- 2 cups uncooked short-grain white rice
- 💧 2 cups water
- 2 tablespoons cider vinegar
Vegetable & Seaweed
- 2 leaves chard
- 🥕 1 carrot, julienned
- 🥒 1 cucumber, julienned
- 6 sheets nori (dry seaweed)
Proteins
- 🥚 2 eggs, well beaten
- ¾ pound beef tenderloin, minced
- 1 (5 ounce) can tuna, drained
Flavorings & Oils
- 2 tablespoons soy sauce, divided
- 1 tablespoon vegetable oil
- 💧 3 tablespoons water
Additional Ingredients
- 🧅 1 onion, diced
STEPS
In a saucepan, bring 2 cups water and cider vinegar to a boil. Add the rice, stir, reduce heat, cover, and simmer for 20 minutes or until sticky and soft.
Cook chard in boiling water until tender and cut into thin strips.
Whisk eggs with soy sauce and water, cook in a skillet over medium heat, and cut into strips.
Sauté onion in vegetable oil over medium heat. Add beef and soy sauce, cook until browned. Drain and set aside.
Preheat oven to 350°F (175°C). Toast nori sheets in the oven for 1-2 minutes until crisp.
Assemble rolls using a bamboo mat, layering rice, carrot, tuna, chard, egg, cucumber, and beef. Roll tightly, seal with sticky rice, and slice into pieces.
