INGREDIENTS
Dough
- 1 cup warm water
- 1 tablespoon white sugar
- 1 teaspoon active dry yeast
- 2 ½ cups bread flour, divided
- 2 tablespoons melted butter
- 🧂 1 teaspoon kosher salt
Seasoning & Filling
- 🧈 2 sticks ice-cold unsalted butter, divided
- ⅔ cup white sugar
- 🧂 2 teaspoons sea salt
STEPS
Combine warm water, sugar, and yeast in a bowl. Let it rest until foamy, about 5 minutes.
Add 2 cups of flour, melted butter, and salt into the yeast mixture. Stir until sticky dough forms.
Knead the dough on a floured surface, incorporating remaining flour as needed until elastic. Let rise for 90 minutes.
Mix sugar and sea salt for the seasoned sugar mixture.
Grease a 12-cup muffin tin with butter and coat with the seasoned sugar.
Roll out the dough to about 1/8-inch thick. Grate 1 stick of ice-cold butter evenly over the surface. Fold and refrigerate for 30 minutes.
Repeat rolling, buttering with the second stick, folding, and refrigerating for another 60 minutes.
Coat the dough with seasoned sugar, roll, and shape into 12 equal squares. Pinch the corners of each to form crown shapes, set into muffin tin.
Bake at 375°F (190°C) for 25-30 minutes until browned and puffed. Cool for 15 minutes before serving.
