INGREDIENTS
Dry Ingredients
- 🍬 3/4 cup sugar
- 2 teaspoons lavender buds
- 1 1/2 cups flour
- 🧂 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 🍬 1 cup powdered sugar
Wet Ingredients
- 🧈 1/2 cup butter, softened
- 🍯 1/2 cup honey
- 🥛 1/2 cup Almondmilk
- 1 teaspoon vanilla
- 🥛 1 tablespoon Almondmilk
STEPS
Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
Pulse sugar, lavender, and lemon zest in a food processor until smooth. Set aside 1/4 cup lavender sugar.
Beat remaining lavender sugar, butter, and eggs until fluffy. Add honey, Almondmilk, lemon juice, and vanilla extract, then gently stir in dry ingredients until combined.
Pour batter evenly into the prepared muffin tin. Bake until golden and tops spring back when lightly pressed, about 20 minutes.
Prepare the glaze by whisking together 1 tablespoon Almondmilk and powdered sugar. Pour a spoonful over each muffin and sprinkle with reserved lavender sugar.
