INGREDIENTS
Crust and Topping
- 1 ½ cups all-purpose flour
- ⅓ cup powdered sugar
- 🧂 ½ teaspoon salt, divided
- 🧈 ¾ cup unsalted butter, cut into 1/2-inch cubes
Filling
- 1 cup white sugar
- 🥚 2 large eggs, at room temperature
- 🍋 ¼ cup lemon juice
- 🍋 2 tablespoons lemon zest
- 2 tablespoons all-purpose flour
- ¼ teaspoon baking powder
- 🍇 6 ounces fresh raspberries
STEPS
Preheat the oven to 350°F (175°C). Line a 9-inch square pan with parchment paper, ensuring an overhang on all sides.
Mix together 1 ½ cups flour, powdered sugar, and ¼ teaspoon salt in a large bowl. Cut in butter until the mixture resembles coarse crumbs. Measure out ½ cup of the crumb mixture and set aside for topping. Press the remaining mixture firmly and evenly into the pan.
Bake the crust in the preheated oven for 10 minutes.
While the crust bakes, prepare the filling by mixing sugar, eggs, lemon juice, lemon zest, 2 tablespoons flour, baking powder, and the remaining ¼ teaspoon salt until combined.
Remove the crust from the oven and scatter raspberries evenly on top. Pour filling evenly over the raspberries, then sprinkle reserved crumb mixture on top.
Bake again until set, about 20 to 25 minutes. Allow the bars to cool in the pan completely, 30 to 45 minutes.
Using the parchment paper overhang, remove the bars from the pan and cut into 9 squares.
