INGREDIENTS
Dry Ingredients
- 1 cup cake flour
- 1 cup whole wheat flour
- 1 cup packed brown sugar
- 🧂 1 ½ teaspoons ground cinnamon
- 🧂 1 teaspoon baking powder
- 🧂 1 teaspoon baking soda
Wet Ingredients
- 🥛 ⅔ cup buttermilk
- ⅓ cup vegetable oil
- ½ cup white sugar
- 🥕 1 ½ cups grated carrots
STEPS
Preheat the oven to 350°F (175°C). Lightly grease and flour a 9x13-inch baking pan or two 9-inch round cake pans.
Stir together flours, brown sugar, cinnamon, baking powder, and baking soda in a large bowl. Add buttermilk and oil, mix until well combined, and incorporate egg yolks.
Beat egg whites in a separate bowl until frothy. Gradually beat in white sugar and continue beating until stiff peaks form.
Fold egg whites into the batter gently, then fold in grated carrots. Pour batter into the prepared pan.
Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25 to 35 minutes. Let cake cool before serving or frosting.
