INGREDIENTS
Focaccia Dough
- 💧 2 cups water
- 1 packet active-dry yeast (0.25 ounce)
- 1/2 teaspoon sugar
- 2 tablespoons olive oil
- 🧂 1 tablespoon kosher salt
- 🍞 3 cups all-purpose flour
- 2 cups bread flour
Toppings
- 🧀 1 cup sharp Cheddar cheese
- 🥓 4 slices bacon
- 🥔 Potato slices (thinly cut)
- Olive oil (for drizzling)
- 🧂 Salt and pepper to taste
- Sliced scallions (for garnish)
STEPS
Pour water into a large bowl and sprinkle yeast and sugar on top. Mix briefly, then let sit until yeast blooms, about 600 seconds.
Stir in olive oil and salt, then add both types of flour. Mix until no dry streaks remain.
Cover the dough and let rise for 2700 seconds.
Perform four sets of stretch and folds at 1800-second intervals, covering the dough between sessions.
Oil a metal cake pan. Spread the dough to fit, cover, and let rise for 3600 seconds.
Preheat oven to 450°F (230°C). Dimples the dough and layer cheese, potato slices, olive oil, salt, pepper, and bacon crumbles. Bake for 1800 seconds.
Allow to cool for 1200 seconds, then garnish with sliced scallions and serve.
