INGREDIENTS
Main
- 🐖 80g sliced pork
- 🥚 1 beaten egg
- 80g lotus root, sliced
- 2 shiitake mushrooms, sliced
- 🧅 55g green onion, sliced
- 1 tsp sesame oil
Soup Base
- 💧 400cc water
- 1 tbsp sake
- 1 tbsp mirin
- 🧂 1/3 tsp salt
- 1.5 tbsp vinegar
- 1/2 tbsp soy sauce
- 1/2 tsp chicken broth powder
Thickener
- 1/2 tbsp cornstarch
- 💧 1 tbsp water
Garnish
- To taste chili oil
- A pinch of pepper
STEPS
Slice lotus root into 3mm pieces, soak in water, and drain. Slice shiitake mushrooms and green onion.
Heat sesame oil in a pot over medium heat. Add pork and cook until color changes. Add lotus root, shiitake mushrooms, and green onion, then stir until coated with oil.
Add soup base ingredients and bring to a boil. Cover and simmer over low heat for 5 minutes.
Increase heat to medium, add cornstarch mixture, and stir until thickened. Slowly pour in beaten egg and stir gently.
Serve in bowls, drizzle chili oil, and sprinkle pepper to taste.
