INGREDIENTS
Vegetables
- 2 medium zucchinis
- 🍅 1/2 cup cherry tomatoes
Protein
- 🍗 4 oz grilled chicken breast
Dressings and seasonings
- 1/4 cup basil pesto
- 1 tbsp olive oil
- đź§€ 2 tbsp grated Parmesan cheese
- đź§‚ 1/4 tsp salt
- 1/4 tsp black pepper
STEPS
Use a spiralizer to turn the zucchinis into noodles. Set aside.
Halve cherry tomatoes and grill them slightly in a heated skillet with 1 tbsp olive oil until soft.
Heat the zucchini noodles in the same skillet for 2-3 minutes until tender but not mushy.
Add grilled chicken, cherry tomatoes, and pesto to the skillet with zucchini noodles. Toss well.
Top with grated Parmesan cheese, salt, and black pepper before serving.
