INGREDIENTS
Pasta
- 🍝 100g spaghetti
Fish
- 🐟 1/2 can (95g) canned mackerel in water
Vegetables
- 🍆 1 eggplant
- 🧄 1 clove garlic, minced
Spices
- 1 tsp sliced red chili
Oil
- 1 1/2 tbsp olive oil
Cooking Liquid
- 2 tbsp pasta cooking water
Seasonings
- 🧂 1/3 tsp salt
- 1 tsp soy sauce
- Pinch of pepper
STEPS
Cut the eggplant in half lengthwise, then slice diagonally into 1cm pieces. Mince the garlic.
Drain the canned mackerel and roughly flake it.
Boil water in a pot, add salt (not listed in ingredients), and cook spaghetti slightly shorter than the package instructions. Reserve 2 tbsp of pasta water and drain the rest.
Heat olive oil in a pan over low heat, add garlic and red chili, and sauté until fragrant. Add eggplant and cook until softened, then add mackerel and stir quickly.
Add the seasonings (salt, soy sauce, pepper) and pasta water, mix well, then add the spaghetti and toss to combine.
