INGREDIENTS
Vegetables
- 1 tablespoon vegetable oil
- 🧅 1/2 cup onion
- 2 cups frozen vegetables, no salt added
Dairy & Eggs
- 1 cup low-fat cheddar cheese
- 🥚 3 eggs
- 🥛 1 1/2 cups 1% milk
Other Ingredients
- 3/4 cup baking mix
STEPS
Wash hands with soap and water.
Cook onion with vegetable oil (or cook together with vegetables).
Cook vegetables (or use leftovers), then drain well.
Grease a round pie pan or an 8x8 inch baking dish.
Spread cooked vegetables in the pan and layer cheese on top.
Mix milk, eggs, and baking mix, then pour over vegetables and cheese.
Bake at 350°F for 35 minutes, until a knife inserted into the middle comes out clean and an internal safe temperature has been reached.
