INGREDIENTS
Dough
- 1 ⅔ cups all-purpose flour, or more as needed
- 🥚 1 large egg
- 1 ½ teaspoons olive oil
- 🧂 ½ teaspoon kosher salt
- 💧 2 tablespoons water, or as needed
Filling
- 🐄 ½ pound ground beef
- 🧅 ¼ cup finely diced onion
- 🌿 2 tablespoons minced fresh parsley
- 1 teaspoon smoked paprika
- 🧂 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 pinch cayenne pepper
Sauce
- 1 tablespoon olive oil
- 🧄 1 clove crushed garlic
- 🍅 ½ cup tomato sauce
- 2 cups chicken or beef broth
- Salt and freshly ground black pepper to taste
- Cayenne pepper to taste
STEPS
Combine 3/4 of the flour, egg, olive oil, salt, and water in a bowl. Mix with a fork, then knead into a smooth dough. Let rest for 30 minutes.
Combine ground beef, onion, parsley, paprika, salt, black pepper, and cayenne in a bowl. Mix and chill in the refrigerator.
Preheat the oven to 400°F (200°C) and grease a cast-iron skillet with olive oil.
Roll out the dough thin and cut into small rectangles (~1.5 x 1.75 inches). Portion out filling and form dumplings by pinching the ends together.
Arrange manti in the skillet with space between dumplings. Bake for 40 minutes on the center rack.
Prepare the tomato broth by heating olive oil, sautéing garlic, then adding tomato sauce, broth, salt, pepper, and cayenne. Simmer and set aside.
Pour tomato broth over baked manti and return to the oven for 15 more minutes.
