INGREDIENTS
Crust
- 3 cups all-purpose flour
- 🧂 1 teaspoon salt
- 🧂 1 teaspoon white sugar
- 1 cup butter flavored shortening, chilled
- 💧 ⅓ cup ice water
- 1 tablespoon distilled white vinegar
- 🥚 1 egg, beaten
- 🥚 1 egg white
Filling
- 🥚 4 eggs, beaten
- 🧂 ¾ cup white sugar
- ½ cup real maple syrup
- ½ cup light corn syrup
- ½ cup dark corn syrup
- 2 ½ teaspoons vanilla extract
- 🧂 ¼ teaspoon salt
- 1 ¼ cups chopped pecans
- 🧈 ⅓ cup butter, melted
- 2 teaspoons maple syrup
STEPS
Sift together flour, salt, and sugar in a mixing bowl. Use a pastry blender to cut in shortening until the mixture resembles cornmeal.
Combine ice water, vinegar, and one beaten egg. Gradually add the liquid, one tablespoon at a time, to the flour mixture, tossing with a fork to form a soft dough. Shape into three discs, wrap in plastic, and refrigerate for 3-24 hours. (Extra pastry can be frozen for later use.)
Preheat the oven to 350°F (175°C).
Line a 9-inch pie plate with pastry dough. Brush the inside of the unbaked pie shell with a slightly beaten egg white.
In a mixing bowl, combine sugar, maple syrup, light and dark corn syrups, vanilla extract, and salt with beaten eggs until blended. Stir in chopped pecans and melted butter.
Pour the filling into the prepared pie shell.
Bake the pie in the preheated oven for 45-55 minutes, or until the center is set.
Remove the pie from the oven and immediately brush the hot top with additional maple syrup. Cool completely and store in the refrigerator before serving.
