INGREDIENTS
Ice Cream Base
- 🥛 1 ½ cups heavy whipping cream
- 🥚 5 egg yolks
- 🥛 1 ½ cups milk
- 🧂 2 tablespoons white sugar
- 1 tablespoon corn syrup
- ¾ cup maple syrup
- 🧂 ⅛ teaspoon coarse salt
- ¼ teaspoon vanilla extract
Walnut Topping
- 🌰 1 ½ cups walnut halves
- ½ cup maple syrup
- 1 tablespoon maple syrup
- 🧂 1 pinch salt
STEPS
Pour heavy cream into a bowl and set a mesh strainer over it. Whisk egg yolks in a separate bowl.
Heat milk, sugar, and corn syrup in a saucepan over medium-low heat until steaming, about 5 minutes.
Slowly pour 1/2 cup of the heated milk into the egg yolks, whisking constantly. Then transfer the yolk mixture back to the saucepan.
Cook and stir until the mixture thickens and coats the spatula. Remove from heat, strain through the mesh strainer into the cream, and mix.
Stir maple syrup, salt, and vanilla into the cream mixture, chill over an ice bath, then refrigerate for 2 hours.
Preheat oven to 275°F (135°C). Spread walnuts on a baking sheet and toast until golden, around 15 minutes. Cool and chop coarsely.
Heat maple syrup in a saucepan until boiling, stir in walnuts, and boil for 10 seconds. Remove from heat and let cool completely.
Pour the chilled cream mixture into an ice cream maker and churn according to instructions. Mix in the prepared walnuts during the last few minutes of churning.
