INGREDIENTS
Pasta
- 12 ounces uncooked penne pasta
Protein
- 1 pound boneless, skinless chicken breasts
Seasoning
- 1 teaspoon freshly ground black pepper
- 2 1/2 teaspoons Italian seasoning, divided
- 2 1/2 teaspoons kosher salt, divided
Vegetables
- 1 cup drained jarred julienne-cut sun-dried tomatoes
- 🧅 1 1/2 cups yellow onion
- 🧄 6 large garlic cloves
- 1 (5 ounces) baby spinach
Condiments & Sauces
- 4 tablespoons oil from sun-dried tomato jar
- 1/3 cup white wine
- 2 tablespoons tomato paste
Butter & Flour
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
Dairy
- 🥛 1 cup whole milk
- 2 cups shredded part-skim mozzarella cheese
- 1/2 cup Parmesan cheese, divided
Breadcrumbs
- 1/2 cup panko (Japanese-style breadcrumbs)
STEPS
Preheat the oven to 350 degrees F (175 degrees C).
Bring a large pot of water to a boil, cook pasta until al dente (8-10 minutes), reserve 1 cup pasta water, and drain.
Season chicken with pepper, Italian seasoning, and kosher salt. Heat 2 tablespoons sun-dried tomato oil in skillet and cook chicken until golden and internal temperature reaches 165 F (10-15 minutes). Slice chicken and mix with pasta.
Sauté onion and garlic in skillet with 1 tablespoon sun-dried tomato oil for 6 minutes, then add white wine, tomato paste, and sun-dried tomatoes (cook 2 minutes). Stir in butter and sprinkle flour, gradually adding reserved pasta water and milk (cook 2 minutes).
Add spinach, Italian seasoning, and salt. Cook until wilted (2 minutes). Stir in mozzarella and Parmesan cheese until melted. Combine with pasta and chicken.
Toast breadcrumbs in skillet with 1 tablespoon sun-dried tomato oil until golden (2 minutes). Sprinkle over pasta mixture with cheese and sun-dried tomatoes.
Bake in preheated oven until cheese is melted (15 minutes). Garnish with basil.
