INGREDIENTS
Mashed Potato
- 6 large russet potatoes, peeled and quartered
- 🧂 3 tablespoons kosher salt
- 1/2 cup unsalted butter, cut in pieces
- 🥛 3/4 cup milk
- 4 ounces Comte cheese, shredded
Au Gratin Layer
- 4 large russet potatoes, peeled and halved
- 🧂 2 teaspoons kosher salt
- 2 tablespoons butter
- 2 ounces Gruyere cheese (or Cheddar cheese), shredded
- 1/2 cup Parmigiano-Reggiano cheese
STEPS
Preheat the oven to 450°F (230°C). Butter a 13x9-inch baking dish.
Add quartered russet potatoes to a pot with 3 tablespoons salt and enough water to cover by 2 inches. Bring to a boil over high heat; reduce heat to medium and simmer until tender, 15 to 20 minutes. Drain very well.
Mash the potatoes until almost smooth. Add butter, salt, and cayenne. Mash until smooth. Add milk and shredded Comte cheese, and mash and mix until evenly combined.
Spread mashed potatoes evenly into the prepared baking dish, and smooth the top. Season with salt and freshly ground black pepper.
Slice each halved potato into 1/8-inch slices and fan them slightly at an angle over the mashed potatoes.
Salt the sliced potatoes generously, brush with melted butter, scatter shredded Gruyere cheese on top, and finish with grated Parmigiano-Reggiano.
Bake in the preheated oven until sliced potatoes are tender when pierced with a knife, about 1 hour.
