INGREDIENTS
Protein
- π 1 cup skinless cooked chicken
- 1 can 15.5 ounce low-sodium white beans
- π 2 (5-ounce) cans of tuna in water (optional substitute for chicken)
Vegetables
- π₯ 1 cucumber
- π§ 1/4 red or white onion
- π 1/2 cup chopped fresh tomatoes
Condiments
- 2 tablespoons vegetable oil
- π 1/4 cup lemon juice
- 1 tablespoon dried basil or parsley leaves
- π§ 1/4 teaspoon salt
- 1/4 teaspoon black pepper
STEPS
Put all ingredients in a bowl and gently toss.
Serve immediately or cover and refrigerate for up to 2 days.
Optional: Use tuna instead of chicken for variation.
