    • 🥚 1 large egg, lightly beaten

    • 1/2 cup feta cheese
    • 1 pound ground turkey

Preheat the oven to 400°F (200°C). Line a sheet pan with foil or parchment paper.

In a large bowl, combine parsley, rosemary, oregano, dill, mint, salt, and pepper. Set aside 2 tablespoons of the herb mix for use later.

To the bowl, add breadcrumbs, shallot, garlic, and a pinch of lemon zest. Mix in whisked egg and 1 tablespoon of olive oil.

Add the ground turkey to the mixture and mix thoroughly with your hands. If too wet, add another tablespoon of breadcrumbs. Form into 18 balls and place them on the prepared sheet.

Meanwhile, toss red bell pepper, red onion, and zucchini slices with the reserved herb mixture, another tablespoon of olive oil, and a squeeze of lemon juice.

After 15 minutes, add the vegetables to the sheet pan alongside the meatballs. Return to the oven for another 15 minutes or until fully cooked.

Once out of the oven, sprinkle the sheet pan with feta cheese, chopped tomatoes, and Kalamata olives. Serve warm.
