Ingredients
- 2 cups melon, honeydew, cantaloupe, or watermelon, fresh
- 1 cup cucumber
- 1/4 cup onion, red or white
- cilantro or mint, fresh
- 1/2 jalapeño
- 1/4 cup lime juice or lemon juice
- 1 tablespoon sugar, white or brown

Wash hands with soap and water.

In a medium size bowl, stir together all ingredients.

Taste and season with more lemon or lime juice, sugar if needed.

Cover and chill for at least 30 minutes. Serve with grilled or broiled fish or chicken.
