INGREDIENTS
Vegetables
- 🥬 150g cabbage, roughly chopped
Seafood
- 25g mentaiko, cut into 4 pieces
Staple
- 50g mochi, cut into 4 pieces
Oil
- 1 tbsp salad oil
Cheese / Dairy
- đź§€ 30g pizza cheese
Batter
- 100g all-purpose flour
- 1 tsp Japanese dashi powder
- đź’§ 100cc water
- 🥚 1 egg
- 2 tbsp tempura flakes
Toppings
- Okonomiyaki sauce, as needed
- Mayonnaise, as needed
- Bonito flakes, as needed
- Aonori seaweed, as needed
STEPS
Chop the cabbage roughly and cut the mochi into 4 pieces.
Cut the mentaiko into 4 pieces.
In a bowl, mix flour, dashi powder, and water. Add the egg, tempura flakes, and cabbage, and mix gently to incorporate air into the batter.
Heat salad oil in a pan. Spread a portion of the batter into a round shape, place mentaiko and mochi on top, and cover with the remaining batter. Cook over medium heat until golden brown.
Flip the pancake, sprinkle pizza cheese on top, cover with a lid, and cook on medium-low heat until the batter is fully cooked.
Serve on a plate and add toppings: okonomiyaki sauce, mayonnaise, bonito flakes, and aonori.
