INGREDIENTS

- 25g mentaiko
- 🥚 2 eggs
- 1 tsp salad oil
Seasoning
- 1 tsp sake
- 1 tsp mirin
- 3 tbsp water
- a pinch of dashi powder
STEPS
Cut open the mentaiko skin and extract the contents.
Crack eggs into a bowl, add the seasoning ingredients (sake, mirin, water, dashi powder), and mix well.
Heat a tamagoyaki pan with salad oil, then wipe off excess oil with a paper towel.
Pour 1/3 of the egg mixture into the pan over low heat, cook until semi-set, then place mentaiko on top and roll from one edge.
Reapply oil using the paper towel, pour half of the remaining egg mixture, lift the rolled omelette to let the mixture flow underneath, cook until semi-set, and roll again.
Repeat with the remaining egg mixture, roll, and wrap the omelette in plastic wrap to shape it. Let it rest to set the shape, then slice into bite-sized pieces and serve.
