INGREDIENTS
Noodles
- 100g somen noodles
Seafood
- 25g mentaiko
Eggs
- 🥚 2 eggs
Seasoning
- đź§‚ 1 pinch salt
- 1 tsp sesame oil
Vegetables
- đź§… 2 tbsp chopped green onion
Sauce
- 1/2 tbsp sake
- 1/2 tbsp mirin
- 1 tsp soy sauce
- 1/3 tsp dashi powder
- 150ml water
Thickener
- 1/2 tbsp potato starch
- 1/2 tbsp water
STEPS
Extract the mentaiko from its casing.
Crack eggs into a bowl, add salt, and mix to create egg mixture.
Boil somen noodles according to package instructions, rinse with water, and drain thoroughly. Mix with half the sesame oil and plate.
In a cleaned pot, combine sake, mirin, soy sauce, dashi powder, and water. Bring to a boil, add mentaiko, and simmer briefly. Add potato starch mixture and cook until thickened.
Heat remaining sesame oil in a pan over medium heat, pour in egg mixture, and stir gently until semi-cooked. Place on top of noodles.
Pour mentaiko sauce over the eggs and noodles, garnish with chopped green onions.
