INGREDIENTS
Meat
- 2 pounds beef skirt steak
- 2 pounds boneless chicken thighs
Spices and Seasoning
- 2 ½ teaspoons garlic powder
- 2 teaspoons fajita seasoning
Beans
- 2 cups refried beans
Oil
- 1 cup corn oil
Tortillas
- 24 corn tortillas
Vegetables
- 🧅 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- ⅓ bunch cilantro, chopped
- 🍅 2 large tomatoes, chopped
Dairy and Cheese
- 1 (16 ounce) package shredded American cheese
- 12 ounces sour cream
STEPS
Preheat the oven to 350°F (175°C).
Rub beef and chicken with garlic powder and fajita seasoning; cut into 1-inch strips and set aside.
Warm refried beans in a saucepan over medium-low heat.
Stir garlic powder, salt, and lemon pepper into mashed avocados; set aside.
Heat corn oil in a skillet over medium-high heat. Cut tortillas into triangles and fry in batches until crisp. Drain on paper towels.
Discard oil and wipe skillet. Stir fry beef, chicken, onion, and bell pepper over medium heat. Add cilantro and stir occasionally.
Layer tortilla triangles in a baking dish. Spread refried beans evenly, sprinkle with cheese, and add the meat mixture.
Bake in the preheated oven until the cheese and beans are bubbly, about 20 minutes. Garnish with sour cream, guacamole, and chopped tomatoes.
