STEPS
Heat 1 cup of sugar in a saucepan over medium heat without stirring until melted and golden brown. Pour into a 9-inch glass or ceramic pie plate and tilt to coat.
In a large bowl, mix milk, remaining sugar, vanilla, and eggs until well blended. Pour into the pie plate.
Cook in the microwave at 50% power for 7 minutes, then at 100% power for 8 minutes. Check readiness with a knife—it should come out clean.
Cool and refrigerate. Before serving, warm the pie plate bottom over simmering water to loosen caramel. Invert onto a serving plate to reveal the caramel topping.
