INGREDIENTS
Main Ingredients
- 🥚 4 large eggs
- 3 pounds Yukon gold potatoes
Liquids and Seasoning
- 1/2 cup dill pickle brine, divided
- 🧂 1/4 teaspoon salt
Dressing
- 1 cup grated Parmesan cheese
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon Dijon mustard
Toppings and Add-ins
- 6 slices bacon
- 1/3 cup chives
- 1/4 cup dill pickles
- 2 stalks celery, chopped
- 1/3 cup crispy fried onions
STEPS
Place eggs in a small pot, cover with water, and bring to a boil. Remove from heat, cover, and let sit for 10 minutes.
Cool eggs in an ice bath, peel, and cut into quarters.
Peel potatoes and cut into 2-inch chunks. Cook in a pot of salted water with 1/4 cup pickle brine until tender, about 10 to 15 minutes. Drain, and set aside.
Mix together Parmesan, mayonnaise, sour cream, mustard, and remaining 1/4 cup pickle brine to form the dressing.
Pour dressing over warm potatoes. Taste and adjust seasoning. Let cool.
Cook bacon in a skillet until crispy. Chop into bite-sized pieces.
Combine potatoes with eggs, celery, dill pickles, most bacon, and chives. Mix well.
Transfer to a dish and top with remaining bacon, chives, and crispy fried onions.
