INGREDIENTS

- 🥔 2 1/2 pounds Yukon gold potatoes, peeled
- 2 tablespoons chives

- 1 1/2 cups low-moisture part-skim mozzarella cheese
- 1 1/2 cups Swiss cheese
- 3/4 cup Parmesan cheese
- 🥛 1/3 cup whole milk

- 1/2 teaspoon ground black pepper
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 tablespoon seasoned breadcrumbs
STEPS
Gather all ingredients.
Preheat oven to 350°F (180°C) and prepare a 9-inch springform pan by spraying with cooking spray. Soak peeled potatoes in cold water for 15-30 minutes.
Combine mozzarella, Swiss cheese, and 1/2 cup Parmesan cheese in a bowl and set aside.
Whisk eggs, salt, and pepper until foamy, then add flour, milk, chives, and baking powder; set aside.
Drain potatoes and pat dry. Slice potatoes into 1/8-inch thick pieces using a mandoline and then pat dry again.
Fold sliced potatoes into the egg mixture until evenly coated.
Layer 1/3 of potato mixture in prepared pan, press flat, and sprinkle 1/2 of cheese mixture. Repeat layering, ending with potato mixture. Discard excess egg mixture.
Sprinkle breadcrumbs and remaining 1/4 cup Parmesan on top. Cover pan tightly with aluminum foil and place on a rimmed baking sheet.
Bake at 350°F for 1 hour 45 minutes. Remove foil during last 45 minutes to brown the top.
Let cool for 10 minutes, remove sides of springform pan, and garnish with chives and flaky salt. Slice and serve.
