INGREDIENTS
Pasta
- π 4 cups lasagna noodles
Oil
- 2 tablespoons olive oil
Vegetables
- 2 stalks celery, sliced
- π§ 2 cloves garlic
- 1 cup green beans
- 1 zucchini, chopped
Canned Goods
- 1 (15-ounce) can red kidney beans
- 1 (15-ounce) can cannellini beans
- π 1 (15-ounce) can diced tomatoes with Italian herbs
- π 1 (15-ounce) can tomato sauce
Cheese
- π§ 1/2 cup grated Parmesan cheese
- π§ 1 cup shredded mozzarella cheese
Seasonings
- 1 teaspoon Italian seasoning
- π§ 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
STEPS
Preheat the oven to 350 degrees F (180 degrees C). Lightly coat a 3-quart baking dish with nonstick cooking spray.
Bring a large pot of water to a boil. Add pasta and cook, covered, for the minimum time according to package directions. Drain and transfer to a large bowl.
Heat olive oil in a skillet over medium heat. Add onion, carrots, and celery; cook until carrots are tender, about 5-8 minutes. Add zucchini and garlic, stirring for another minute.
Combine cooked pasta, vegetable mixture, beans, diced tomatoes, green beans, tomato sauce, Parmesan, Italian seasoning, salt, and pepper. Mix well. Transfer to a prepared baking dish and cover with foil.
Bake for 20 minutes. Remove foil, top with shredded mozzarella cheese, and bake for an additional 10-15 minutes until the cheese is melted.
Top each serving with the remaining Parmesan cheese and sprinkle with fresh herbs.
