INGREDIENTS
Dried Fruits
- 3 cups dried currants
- 1 ¼ cups raisins
- 1 cup sultana raisins
- ½ cup candied red cherries, chopped
Liquid and Zest
- 8 fluid ounces brandy

- 🍋 1 large lemon, zested
Butter and Sugar
- 🧈 1 cup unsalted butter, softened
- 🧈 2 tablespoons unsalted butter, softened
- 1 cup brown sugar
- 2 tablespoons brown sugar
Eggs and Molasses
- 🥚 3 large eggs, beaten
- 1 tablespoon molasses, or more to taste
Nuts and Flours
- 1 cup chopped almonds
- 1 cup all-purpose flour
- ½ cup self-rising flour
- ½ cup ground almonds
Spices
- 2 teaspoons mixed spice
Decoration
- 6 tablespoons apricot jam
- 10 ounces marzipan
- 12 ounces white fondant
- 1 teaspoon blue food coloring
STEPS
Combine currants, raisins, sultana raisins, and candied cherries in a container. Stir in brandy, orange zest, and lemon zest. Close the container and let soak for 2 to 3 days, stirring occasionally.
Preheat the oven to 275°F (135°C). Prepare 24 silicone cupcake liners or ramekins on a baking sheet.
Cream butter and sugar in a bowl using an electric mixer. Beat in eggs and molasses. Mix in chopped almonds, both flours, ground almonds, and mixed spice. Fold in soaked fruit and spoon mixture into liners.
Bake for 1.5 hours at 275°F until a toothpick comes out clean. Cool cakes to room temperature for 30–45 minutes.
Transfer cooled cakes to airtight tins. Let sit for at least 10 days before decorating.
Heat apricot jam until soft. Brush jam onto cakes.
Roll out marzipan between plastic wrap sheets. Cut out 24 circles matching the cake tops. Place one circle on each cake. Store cakes in airtight containers for 8 hours.
Roll out fondant. Cut out 24 circles to fit cake tops. Use a stencil and blue food coloring to paint designs on fondant circles. Place them on cakes.
