INGREDIENTS

- 🍗 200g chicken thigh
- 100g lotus root
- 🍆 2 eggplants
- 🧅 1 tbsp chopped green onion
- 🧈 1 tbsp salted butter
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1 tbsp miso
STEPS
Cut chicken, lotus root, and eggplant into bite-sized pieces. Soak lotus root in water and drain.
Mix all sauce ingredients (sake, mirin, sugar, miso) in a bowl.
Heat a frying pan over medium heat, add chicken skin-side down, and cook until browned. Flip the chicken, add lotus root and eggplant, and stir-fry until eggplant softens.
Add butter, stir until melted, then pour in the sauce mixture and stir-fry. Serve on a plate and garnish with chopped green onion.
