INGREDIENTS
Oil and Seasoning
- 1 tablespoon olive oil
- 🧄 1 clove garlic, minced
- ¼ teaspoon red pepper flakes
- ¼ teaspoon Greek seasoning
- 1 pinch dried rosemary
- 1 pinch ground thyme
- 1 pinch dried basil
- 1 pinch Italian seasoning
Vegetables
- 1 stalk celery, chopped
- 🍅 1 (32 ounce) can diced tomatoes with juice
Protein
- 🥩 1 pound ground beef
STEPS
Add enough oil to a large stockpot to thinly coat the bottom; heat over medium. Add 1 onion, carrots, garlic, bay leaf, red pepper flakes, Greek seasoning, rosemary, thyme, basil, Italian seasoning, salt, and black pepper; cook and stir until mixture begins to soften and brown.
Add tomatoes and ground beef, breaking beef apart with a wooden spoon; bring to a boil. Cook until beef is cooked through and carrots are tender.
Add potatoes, remaining onion, and celery; cook until potatoes are tender.
Remove from heat and let sit before serving for 20 to 30 minutes.
