INGREDIENTS
Dry Ingredients
- 3 cups all-purpose flour
- 🧂 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 tablespoon ground cinnamon
Wet Ingredients
- 🥚 3 large eggs
- 1 cup vegetable oil
- 2 ¼ cups white sugar
- 3 teaspoons vanilla extract

- 2 cups grated zucchini
- 1 cup chopped walnuts
STEPS
Preheat the oven to 325°F (165°C). Grease and flour two 8x4-inch pans.
Sift together flour, salt, baking powder, baking soda, and cinnamon in a large bowl.
In another large bowl, beat eggs, oil, white sugar, and vanilla together with an electric mixer until combined.
Add the dry ingredients to the wet mixture and beat well.
Stir in grated zucchini and chopped walnuts until evenly incorporated.
Pour the batter evenly into the prepared pans.
Bake in the preheated oven for 40-60 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pans on a wire rack for 20 minutes. Run a knife around the edges to loosen, then invert carefully onto a wire rack and let cool completely.
