INGREDIENTS
Marinade
- π§ 2 tablespoons soy sauce
- π· 2 tablespoons white wine
- π° 1 teaspoon sesame oil
- 2 teaspoons cornstarch
- π 1 pound pork tenderloin, cut into thin strips
Filling Base
- π 1 ΒΎ ounces dried shiitake mushrooms
- π§ Β½ cup sliced green onions
- π§ 3 tablespoons minced garlic
- π 2 tablespoons peeled and minced fresh ginger
- 1 head napa cabbage
Sauce
- π§ 3 tablespoons soy sauce
- π· 3 tablespoons white wine
- Β½ teaspoon cornstarch
- π¬ Β½ teaspoon white sugar
- β« ΒΌ teaspoon ground black pepper
Cooking
- 1 tablespoon vegetable oil
- π° 1 teaspoon sesame oil
- π₯ 2 large eggs, beaten
- π· 2 tablespoons white wine
Hoisin Sauce Mixture
- 1 cup hoisin sauce
- π§ 1 tablespoon soy sauce
- π° 1 teaspoon sesame oil
STEPS
Mix marinade ingredients: 2 tablespoons soy sauce, 2 tablespoons white wine, 1 teaspoon sesame oil, and 2 teaspoons cornstarch. Add pork and refrigerate for 30-60 minutes.
Soften mushrooms in hot water for 15-20 minutes. Chop after removing stems and add to a mix of green onions, garlic, and ginger.
Prepare napa cabbage by separating stems and green leafy portions; slice stems and chop leaves.
Combine sauce ingredients: 3 tablespoons soy sauce, 3 tablespoons white wine, 0.5 teaspoon cornstarch, sugar, and black pepper.
Heat vegetable oil and sesame oil in a wok, then stir-fry the marinated pork until browned (about 5 minutes) and set aside.
Scramble eggs in the same wok (2 minutes), then add the mushroom mixture and cook for up to 2 minutes. Add cabbage stems and leaves, cooking in sequences with 2 tablespoons white wine.
Return the pork and mix with the sauce. Stir well until thickened and heated thoroughly (about 2 minutes).
Prepare hoisin sauce mixture in a bowl. Serve pork in pancakes with 1 tablespoon hoisin mixture on each pancake and roll to serve.
