Preheat the oven to 350°F (175°C).

Heat olive oil in a large skillet over medium-high heat. Sauté onion, carrot, celery, garlic, and ginger until onion is translucent, about 5 minutes. Stir in all spices and cook for 1-2 minutes to release flavors. Remove from heat and let cool for 10-15 minutes.

Combine ground lamb and beef in a large bowl. Add cooled vegetable mixture, bread crumbs, cilantro, eggs, and mint. Mix thoroughly.

Transfer the meatloaf mixture into a 1 1/2-quart loaf pan. Place the loaf pan in a larger baking pan and pour water into the baking pan to reach halfway up the loaf pan.

Bake the meatloaf in the preheated oven for about 1 1/2 hours, until firm and the internal temperature reaches 160°F (70°C). Let the meatloaf rest for 10-15 minutes after baking.

Optional: Prepare the BBQ sauce by combining ketchup, minced onion, pomegranate molasses, chipotle pepper, adobo sauce, and sugar in a small saucepan over low heat. Simmer for about 5 minutes. Allow to cool and serve with the meatloaf.
