INGREDIENTS
Seaweed
- 50g mozuku seaweed
Mushroom
- 🍄 100g enoki mushrooms
Vegetable
- đź§… 15g chopped green onion
Seasoning
- 2 tbsp miso paste
Broth
- 1/3 tsp dashi powder
- đź’§ 400ml water
STEPS
Rinse the mozuku seaweed briefly and drain the excess water.
Trim the root ends of the enoki mushrooms, cut them in half lengthwise, and separate them. Chop the green onion into small slices.
In a pot, combine dashi powder and water, and bring to a boil over medium heat. Add the enoki mushrooms and simmer for 1–2 minutes.
Add the mozuku seaweed and green onion to the pot, simmer briefly, then reduce the heat to low. Dissolve the miso paste into the soup and heat gently without boiling.
