INGREDIENTS
Batter
- 1 1/4 cups red wine
- 4 whole star anise pods
- 2 tablespoons brandy
- 🌾 1 3/4 cups all-purpose flour
- 2 tablespoons cocoa
- 🧂 1 teaspoon kosher salt
- 1 teaspoon baking soda
- 1 1/2 teaspoons cinnamon
- 1 1/2 teaspoons ground ginger
- 1 pinch cayenne pepper
- 1/2 cup light brown sugar
- 1/2 cup white sugar
- 2 tablespoons orange zest
- 1/2 cup vegetable oil
- 🥚 2 large eggs, beaten
- 2/3 cup mulled wine
Icing
- 2 cups confectioner's sugar
- 3 to 4 tablespoons mulled wine, or as needed
Optional Syrup
- 1 cup mulled wine
- 1 cup white sugar
STEPS
Preheat the oven to 350°F (180°C). Generously oil a 10-inch round cake pan and line the bottom with parchment.
Combine red wine, star anise, and brandy in a saucepan. Simmer over medium heat, reduce to low, and gently simmer for 15 minutes. Reserve 2/3 cup hot mulled wine and let the rest cool completely.
Mix flour, cocoa, salt, baking soda, cinnamon, ginger, cayenne, brown sugar, and white sugar in a bowl. Add zest, oil, and eggs, mixing until smooth.
Whisk in reserved 2/3 cup mulled wine to form a shiny batter and pour into the cake pan. Tap the pan to release air bubbles.
Bake for 25 to 30 minutes until a toothpick comes out clean. Cool for 20 minutes in the pan, then remove and cool completely on a wire rack.
Mix confectioner's sugar and 3–4 tablespoons mulled wine into a smooth icing and drizzle over the cooled cake.
Optional: Prepare syrup by boiling 1 cup mulled wine with 1 cup sugar for 1 minute. Cool and chill before using.
