INGREDIENTS
Wild Vegetables
- Maitake mushrooms 50g (broken into pieces)
- Shimeji mushrooms 50g (broken into pieces)
- Shiitake mushrooms 50g (thinly sliced)
Basic Seasonings
- Miso paste 2 tablespoons
- Dashi stock 2 cups
- Green onions to taste (finely chopped)
STEPS

Bring the dashi stock to a boil in a pot, and add maitake, shimeji, and shiitake mushrooms.

Once the mushrooms soften, reduce the heat and add miso paste, stirring well to dissolve.
