INGREDIENTS
Broth Base
- 8 cups water
- 2 cups dried shiitake mushrooms
- 1 tablespoon miso paste
- 🧂 2 teaspoons soy sauce
- 2 teaspoons rice wine vinegar
- 🧄 1 clove garlic, minced
- 1/2 teaspoon ginger paste
Noodles
- 2 (3.5-ounce) packages instant ramen noodles
Optional Toppings
- kimchi
- chopped green onions
- chili crisp
- 🥚 soft boiled eggs
- 🥚 hard boiled eggs
- quail eggs
STEPS

Bring water, mushrooms, miso paste, soy sauce, vinegar, garlic, and ginger to a boil in a large soup pot. Reduce heat to low and simmer for 25 minutes.

Add ramen noodles and dunk in the broth until they no longer float to the top. Cook for 5 minutes.
