INGREDIENTS
Main Ingredients
- 1 pack nameko mushrooms
- 🥚 2 eggs
- 75g firm tofu
- 1 tbsp salad oil
- đź§… Chopped green onion, as needed
Ankake Sauce
- đź§‚ 1 tsp sugar
- 3 tbsp concentrated soy sauce (3x)
- đź’§ 100ml water
- 1/2 tbsp cornstarch
- đź’§ 2 tbsp water for slurry
Omelette Seasoning
- 1/2 tsp Japanese dashi powder
- đź’§ 2 tbsp water
- đź§‚ Salt and pepper, to taste
STEPS
Wash nameko mushrooms under water and drain well.
In a pot, combine nameko mushrooms and ankake sauce ingredients. Heat until boiling, then simmer for 2 minutes on medium heat. Add cornstarch slurry to thicken.
Crack eggs into a bowl and mix with omelette seasoning ingredients.
Heat salad oil in a frying pan over medium heat. Add egg mixture and stir lightly.
Break tofu into small pieces and add to the pan. Shape the omelette and transfer to a plate.
Pour the ankake sauce over the omelette and garnish with chopped green onion.
